    I'd like to remove the 'made with love by Orion Themes'  in the copyright footer and replace with new text.

    Hi,

    You can add content by adding SiteOrigin Editor widget into the Copyright Footer widget area in Appearance -> Widgets:

    You can place any other widget there as well.
